What split do sporting goods consignment shops use?

Many pay consignors 60 to 70% on gear. Set a default and change it per consignor or item.

Can I run a ski swap with it?

What happens to gear that doesn't sell?

When the agreement ends and your pickup grace period has passed, it's returned to the consignor, donated or kept as shop stock, whichever you chose.
